Bougatsa (Greek μπουγάτσα [buˈɣatsa]) --- Semisweet, Smooth, Crunchy!
Bougatsa is a Greek breakfast pastry filled with custard, wrapped with phyllo and dusted with confectionery sugar and cinnamon. It is best when it is eaten the day that is baked either warm or cold. The custard or Greek “Crema” is made with semolina flour, eggs, and milk.

One day. Best the day baked. Refrigerate leftover Bougatsa and you can enjoy for one more day cold or reheated. Can be consumed up to three or four days, however the texture will not be the same. Custard will harden. If purchased not baked, can be kept frozen up to four months if well sealed.
Options:
If you would like to buy it frozen, then you thaw in the refrigerator overnight and bake the next day @ 375, middle rack for approximately 35 to 40 mins. Depending on oven, may go a little longer when it’s cold. Just watch the color, has to be golden brown.
